One might think that comfort food would have emerged as king during the pandemic and these long and grueling months of social lockdown, but it's not true. Vegetables are a hot commodity. As many people are reaching for healthy stuff -- particularly vegetables as normally would be indulging in high carb feel good entrees and treats. A new survey shows that seventy percent of respondents say they've been eating healthier than ever while 39% said that their sheltering-in-place has them eating more veggies. Sixty-eight percent said they have been using veggies and getting more innovative in their cooking. (SWNS)
